Italian White Bean Soup with Sausage & Spinach
12 oz. Italian sausage, sliced 1/2 inch thick
1/4 C. water
1 medium onion, chopped
1 tsp. minced garlic
1 T. olive oil
2 15 oz. cans white kidney (cannelloni) beans, rinsed and drained
2 14 oz. cans reduced sodium chicken broth
1 14 1/2 oz. can diced tomatoes with basil, oregano & garlic, undrained
4 cups coarsely chopped kale or spinach
Ground pepper
Combine sliced sausage and water in a large skillet. Bring to boil; reduce heat. Simmer, covered about 10 minutes or until sausage is no longer pink. Uncover and cook about 5 minutes more or until sausage is browned, stirring frequently. Remove sausage and set aside.
Meanwhile, cook onion and garlic over medium heat in a large saucepan about 5 minutes or until onion is tender. Stir in beans, broth and undrained tomatoes. Cover and bring to boil, reduce heat. Simmer covered for 5 minutes.
Stir in cooked sausage and spinach. Simmer, uncovered about 3 minutes more or until spinach is tender. Season to taste with pepper.
Serves 5
I doubled this recipe. It is delicious and very easy to make. It is a very hearty soup. All you need is a nice baguette and your meal is complete.
Bon Appetit!

Hi Janet - friend of Donna's here! Welcome go blogworld...
The beans look yummy, I'm copying down the recipe now!

looks like it'll work.
I'm the queen of the crock pot.
Cause I work, cause they're hungry when they walk in the door, cause i"m a lazy cook.

Sweet Janet -
It's Aunt Barb -- I check Donna's blog almost every day and see that you've joined in. A word of encouragement to you - you'll do great and have fun too.
The soup is definitely going to be on my table this week-end!!
Much Love, Aunt Barb
Well lookie who's here! I'm happy to "see" you! Bud doesn't much care for beans, but LOVES Italian sausage with a passion. I'll bet I could get some beans in him this way! (Ignore if this is the second post...a little trouble with the comments here.)
Welcome Janet! You're on the slippery slope of the blog world -- beware (-:
Great recipe, fun to see the picture of you and Donna again.
No guesses on the name - the coffee hasn't hit my brain yet.
Happy to have you here,
Diane
boy, that does sound good. My mouth is watering.
Hi aunt janet! That soup sound's really great(believe it or not i LOVE spinach), my mom will be making it soon i hope :)
The soup does sound sooo good. And I love the picture of you and your sister. (I have a sister Janet, too!)
Welcome to the blogworld. It does get easier. Tho it still takes me awhile every time I post a picture to remember how to do it!
Blessings,
Sandy
Hey Mom,
It smells good!!
Janet!! WooHoo!
I love the name of your blog and the "More than just a comment" is perfect. :)
Welcome to this side of the blogosphere. I hope it's a good experience for you.

I think I blogged for two years before I figured out how to post a picture :)

For shame, for shame, for shame! You didn't tell me you were starting a blog!
How cool! Don't say you won't post often! Do it!!
Oh, Oh, I think I know where "Just Janet" comes from. Does it have anything to do with Rocky Horror Picture Show?
My sister Janet took her email name from that show, but she took the "other" part. I'll share it with you later if I'm correct!
Blessings,
Sandy C.
Hi Sandy! Good guess. But no, that is not why I named my blog Just Janet. :) My husband has said that line to me, just to be silly. I've never seen that movie, can you believe it?
For 3 years I have commented on blogs and have only been known, by most, as "Janet". No last name and no blog of my own. That will also explain the finer print, "more than just a comment". It also describes my personality I think. Simple, plain, not complicated and certainly not as well read as most of the ladies I read.
Thanks for writing.
Janet.
I use a very similar soup recipe and my family loves it! It is an easy way to sneak in some spinach!!!
